Hi, I'm Casey

I’ve been designing gingerbread houses since 2019, when a personal creative project quickly turned into a love for seeing just how much could be made from gingerbread, icing and a little patience.

Since then, I’ve trained with masters of the craft, created original designs for people to build at home and even recreated two Vienna landmarks in gingerbread for a city-centre Christmas window display.​

Alongside making, I’ve also spent years facilitating workshops in corporate and private environments and bringing groups together. Bitesize is where those two worlds meet: thoughtful design, hands-on creativity and experiences that feel relaxed, welcoming and fun.

Ps. I am often asked if I eat my own gingerbread houses, and the truth is, actually I don't. I keep them on display as long as they will last (which is usually around 3 months in my climate).
